Main Ingredients for Egg Quesadilla Recipe
• Ripe avocado, peeled and stoned
• Fresh ground black pepper and salt
• Dash of Tabasco sauce (your choice)

• Lime Juice – 1/2
• Wholemeal or multigrain wrap -1
• Finely chopped spring onions – 1
• chopped small tomato -1
• a handful of baby chopped spinach leaves -1
• tablespoon reduced-fat sour cream -2
• smoked salmon -25g
Steps to Follow
Preheat the oven to 200°C /Gas Mark 6/Fan 180°C.
Step 1: Put the avocado in a bowl with the lime juice, roughly mash, after that add Tabasco to taste seasoning and onions.
Step 2: Place the wrap on a nonstick baking tray.
Pile up the avocado on one side of the wrap, leaving a 1cm border clear at the edges.
Now, make a divot in the avocado with the back of a spoon.
Step 3: Crack the egg into the divot, then scatter over the spinach and leaves tomatoes Season well.
Brush the edge of the wrap with a small amount of water, after that fold the wrap over the filling and press the edges together to seal.
Step 4: Pop in the oven for 10 mins or till crisp and pale golden, then move to a plate, top with a dollop or two of soured cream and slices of smoked salmon and Serve hot.
