- ½ tbsp mild chili powder
- ½ juiced lemon
- ½ tbsp chili sauce
- 1 chopped onion
- 1 diced carrot (medium)
- 2 tbsp vegetable oil
- 8 taco shells
- crushed garlic (1x clove)
- salt (to taste)
- pepper (to taste)
- cayenne pepper (to taste)
- 450g taco beans (or kidney beans)
- 400g chopped tomatoes (1x tin)
- grated cheddar cheese (to serve, optional)
- sour cream (for serving, optional)
- shredded lettuce (to serve, optional)

Steps to Follow
Step 1: First, dice the carrot, crush the garlic and chop the onion.
Step 2: Heat the oil after that cook the vegetables until soft.
Step 3: Stir in the beans, lemon juice, and tomatoes. Season and stir in the chilli powder, cayenne and chilli sauce (optional).
Step 4: Cook gently for 15 minutes or until the sauce has thickened.
Step 5: Stand the tacos on a baking sheet, and then warm in the oven for another 3 minutes.
Step 6: Now, fill the shells with the vegetable mixture.
Step 7: Top with sour cream, grated lettuce, and cheese.
