Pea Risotto Recipe
A delicious twist Pea Risotto Recipe is a quick and very easy to make a dish for the family just needs a lot of stirring.

- 1 chicken stock (hot)
- 2 tbsp dried thyme
- 1 tbsp dried mint
- ½ lemon (zest and juice optional)
- 1 finely chopped medium onion
- crushed garlic (1x clove)
- pepper (to season)
- grated cheese (cheddar/parmesan)
- 25g butter
- 250g arborio risotto rice
- 75g frozen peas
- 100g chopped ham (or bacon)
Steps to Follow
Step 1: Melt butter in large pan over a medium heat.
Step 2: Add onion and let them soften for 2 minutes.
Step 3: Add garlic and cook for another 2 minutes.
Step 4: Add rice and fry with garlic and onion for further 1 minute.
Step 5: Add 1/3 of hot stock to cover rice and cook, stirring constantly, until liquid has absorbed.
Step 6: Repeat with remaining stock.
Step 7: Add peas, ham (or cooked bacon), seasoning and herbs and cook for another 3-5 minutes (until peas are cooked).
Step 8: Remove from heat and stir in lemon zest and juice (optional)
Step 9: Ladle into dishes, top with grated cheese and serve with crusty bread – or bread without crust.
